Ingredients:

  • 1 Cup Mappilai Samba Rice
  • One up Parboiled Idli Rice
  • ½ Cup Urad dal
  • Two tablespoons Chana dal
  • Two teaspoon Methi seeds
  • Salt - As required
  • Oi - For drizzling

Method:

Begin by soaking a combination of Mappilai samba rice, parboiled idli rice, round urad dal, chana dal, and methi in a bowl for four to five hours. After soaking, blend the ingredients with adequate water until a smooth batter is achieved. Incorporate salt into the mixture and allow it to ferment overnight. 

For dosa preparation, heat a pan and grease it with oil. Pour a spoonful of batter onto the pan in a spiral motion. Sprinkle oil around the edges and cook on medium heat while covered. Once the dosa turns crispy, carefully remove it from the pan and serve promptly with chutneys or curries.

Tips: 

Since we are covering the dosa with a lid, there is no need to flip it. If you prefer cooking without a lid, rotate the pan to cook the other side. Due to the firm nature of mappillai samba rice compared to other varieties, it requires additional soaking time. Furthermore, a small amount of extra water should be added to the batter for optimal fermentation.
