About Marathi Moggu /Kapok Buds dried
Kapok Buds, also known as Marathi Moggu, are used in the popular South Indian rice dish called Bisi Bele Bath. Before using, Marathi Moggu is fried in oil to bring out its full flavor, similar to a mix of mustard and black pepper. These buds come from the Kapok tree or Silk Cotton tree and are considered a type of caper. In Kannada, it is called moggu and in Telugu, it is called mogga, both meaning a bud. Moggu is a spice used in various dishes from Karnataka, such as Bisi Bele Bath, Saagu, and Kannadiga-style lotus. It is always roasted and ground with other spices before being added to a dish. Although Marathi Moggu is a misnomer as it is native to Karnataka, it is still used in Andhra-style dishes as a special spice. This spice is commonly used in making curry powders and is also found in Chettinad cuisine.
